La Petite Maison's Cocktail – The Method

We present a home-style take on a beverage featured on a new cocktail list. This is a large-volume prepared mix that is bursting with tastes of a holiday season, rendering it ideal for a celebration. Reserve the remaining citrus syrup for morning drinks, desserts, or for additional servings of bikinis.

Bikini Recipe

Serves 10 guests

For the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

For the Premix (yields 850ml, enough for 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Place the listed ingredients in a pot, bring to a simmer, mixing so the sugar melts. After that, take off the heat and leave to cool down fully. Transfer to a sealable bottle, cap it and store in the fridge, where it will keep for about four weeks.

To make Batch Mix: Mix the specified liquids in a sizeable container, leave to sit for 60 minutes, then filter it , ideally through cheesecloth, so it's completely strained.

For serving: Measure 85ml of the cocktail base into a stirring glass filled with ice, and stir gently for about 60 seconds to chill. Pour to a frosted cocktail glass or a similar vessel, top with a few cranberries and complete it by giving it a quick spritz with the mandarin essence over the drink.
